Add oil to a heated pot (or butter if preferred).
Add about 2 tablespoons of betta fat curry to the pot.
Pour in some hot water to help the curry cook faster and stir.
Allow the curry to sauté on medium heat to prevent burning and maintain color.
Add green and yellow bell peppers to the pot and let them cook with the curry.
Pour in coconut milk and additional water to ensure enough liquid for cooking the rice.
Add scallion, thyme, and scotch bonnet pepper for flavor.
Add desired amount of salt.
Rinse 2.5 cups of rice 2-3 times until the water runs clear to remove excess starch.
Add the rinsed rice to the pot, ensuring the water level is about an inch to an inch and a half above the rice.
Once the mixture starts to boil, reduce the heat to low and cover the pot.
Allow the rice to slow cook for about 40 minutes until ready.
Fluff the rice with a fork after cooking.
