Monterey jack is often less expensive while still melting well.

Preheat oven to 350°F.

Stir together chicken soup, sour cream, poppy seeds, Parmesan cheese, pepper, and garlic powder. Add chicken and stir until coated. Transfer to a 9x13-inch baking dish.

In a medium bowl, stir together the crushed crackers and melted butter. Arrange over chicken mixture in baking dish.

Bake, uncovered until bubbly and golden brown, about 30 minutes.

Serve over white rice and enjoy!

Note: You can also spread cooked rice in the bottom of the casserole dish before topping with chicken mixture if desired.
