Pit the medjool dates if they aren't already pitted and open them up with the sticky side facing up, arranging them in a rough rectangle shape.
Cover the dates with plastic wrap and flatten them out using a rolling pin, saucepan, or the back of a measuring cup until there are no gaps.
Peel back the plastic wrap and spread room temperature creamy peanut butter over the top of the flattened dates, reaching the edges.
Melt chocolate chips in the microwave for about 60 to 90 seconds, stirring every 30 seconds until fully melted.
Pour the melted chocolate over the peanut butter layer and spread it evenly using the back of a spoon or an offset spatula.
Sprinkle flaky sea salt over the chocolate layer.
Sprinkle half a cup of coarsely chopped peanuts over the chocolate while it's still melted, pressing them down lightly to help them stick.
Refrigerate uncovered until the chocolate is firm for about an hour, or freeze for 30 minutes.
Slice the firm chocolate-covered date mixture into bars or squares.
