Cut the hard-boiled eggs in half lengthwise and place them on a tray.

Use a cookie sheet for ease of putting the eggs in and out of the smoker.

Place the egg whites on the top shelf of the smoker for 20-25 minutes.

Pop all the yolks into a big mixing bowl.
