Heat olive oil in a tagine or pot.
Add chopped onion and garlic; sauté until softened.
Stir in cinnamon, ginger, and saffron; cook briefly.
Cut sweet potatoes into quarters and layer them in the tagine.
Add the sautéed onion and garlic mixture on top of the sweet potatoes.
Add raisins on top of the onions.
Pour in a small amount of hot water to help cook the ingredients.
Cover and cook on low heat until sweet potatoes are tender.
Add butter and honey towards the end of cooking for flavor.
Finish with a squeeze of lemon juice before serving.
