Layer the three rectangles on top of each other, with the colored layers on the outside, and refrigerate for 30 to 60 minutes to firm up.
Roll the layered dough into a cylinder using the parchment paper to guide the roll, applying pressure to avoid air pockets.
Wrap the rolled dough in parchment and refrigerate for another 30 to 60 minutes to firm up.
Preheat the oven to 300°F (150°C).
Unwrap the chilled dough and cut into 1/4-inch thick pinwheels using a sharp knife.
Place the pinwheels on a parchment-lined cookie sheet, leaving space between them.
Bake in the preheated oven for 8 to 10 minutes, being careful not to overbake.
Allow the cookies to cool on the cookie sheet until they reach room temperature before transferring them to a cooling rack.
