Wash tangerines thoroughly and peel them, removing any seeds.
Chop the tangerine flesh into small pieces.
Combine tangerine pieces, sugar, and lemon juice in a large pot.
Add water to the pot and stir well to combine all ingredients.
Heat the mixture over medium heat until it begins to boil, stirring occasionally.
Reduce heat and let it simmer for about 30 minutes, stirring frequently.
Add pectin and continue to cook for another 10 minutes, stirring constantly.
Check the consistency by placing a spoonful on a cold plate; it should gel slightly.
Remove from heat and stir in vanilla extract and a pinch of salt.
Pour the hot jam into sterilized jars, leaving some space at the top.
Seal the jars tightly and let them cool to room temperature before refrigerating.
