Wash the potatoes and leave the skin on for nutrition.
Dice the potatoes into bite-sized pieces.
Place the potatoes in a bowl and add 1 tsp each of onion powder, garlic powder, smoked paprika, 1 tsp each of dried oregano and dried thyme, and 30 ml of olive oil.
Season with salt and cracked black pepper, then mix to coat the potatoes evenly.
Set the air fryer to 200°C and cook the potatoes for about 22 minutes, or longer if needed.
Slice the chicken breast into thin strips, then dice into bite-sized pieces.
In the same bowl as the potatoes, add the chicken pieces and grate in 6 cloves of garlic.
Add 1 tsp each of onion powder, smoked paprika, dried oregano, dried thyme, salt, and cracked black pepper to the chicken and mix to coat.
In a large pan over medium-high heat, add 30 ml of olive oil and the chicken, spreading it out to build a crust for 1-1.5 minutes.
Cook the chicken for 5-6 minutes until just cooked through.
Add 125 g of barbecue sauce to the chicken and mix for about 1 minute to create a glaze.
Once the potatoes are ready, add them to the pan with the chicken and mix to coat in the barbecue glaze.
Sprinkle grated mozzarella cheese over the top and save some for garnish.
Cover the pan with a lid and let it cook on low heat for 1-1.5 minutes until the cheese melts.
Serve by dividing into portions of about 400 g (14 oz) each, optionally drizzling with more barbecue sauce and garnishing with parsley.
Let the portions cool for 15-20 minutes before storing in the fridge for 3-4 days or freezing for up to 3 months.
