Heat olive oil in a large pot over medium heat until shimmering.

Season the rabbit pieces with salt and black pepper.

Brown the rabbit in the pot for 5-7 minutes, turning occasionally until golden.

Remove the rabbit from the pot and set aside.

Add chopped onion and garlic to the pot, sauté until softened, about 3-4 minutes.

Stir in diced tomatoes and paprika, cooking for another 2-3 minutes.

Pour in the red wine, scraping up any browned bits from the bottom of the pot.

Return the rabbit to the pot and add bay leaves, thyme, and carrots.

Cover and simmer on low heat for 30-40 minutes until the rabbit is tender.

Add diced potatoes and cook for an additional 20 minutes until potatoes are fork-tender.

Adjust seasoning with salt and pepper as needed.

Garnish with chopped parsley and a squeeze of lemon before serving.
