1/2 loaf of day-old bread (cubed or torn)
250 g full cream milk
4 large eggs
1 cup shredded cheese (cheddar, Swiss, mozzarella, or a mix)
Salt and pepper to taste
1 teaspoon dried herbs (thyme, oregano, or your preferred blend)

Preheat your oven to 170°C fan (or 350°F fan).

Grease a baking dish with butter to prevent sticking.

Peel and quarter the onion. Chop in a Thermomix for 5 seconds at speed 5.

Slice the bacon and capsicum and add to the Thermomix bowl.

Sauté the onion, bacon, and capsicum in the Thermomix for 15 minutes/100°C/speed 1.

Tear or cut the bread into bite-sized pieces.

Weigh the milk into a small jug or bowl. Add the eggs, herbs, salt, and pepper to it.

Grate the cheese if it isn't already shredded.

Layer half of the bread in the bottom of the dish, sprinkle half of the cheese over it, and add the sautéed vegetables (and meat, if using).

Repeat the layering process with the remaining bread.

Pour the egg and milk mixture over the layered ingredients, ensuring all the bread is soaked.

Cover the dish with a sheet of baking paper-lined foil and refrigerate for at least 30 minutes, or overnight.

Bake the dish for 20 minutes with the foil cover on. Remove the foil, sprinkle the remaining cheese on top, and continue baking until the top is golden brown and the egg is set.

Let the strata cool for a few minutes before slicing and serving.
