Add 500 ml of lukewarm water to a bowl.
Add 1 tablespoon of dry yeast and 1 teaspoon of sugar, leave to react for 5 minutes.
Add 600 g of white flour and 1 teaspoon of salt to the yeast mixture, mix well.
Add 2 tablespoons of olive oil and another 100 g of flour, knead by hand to get a softer dough.
Add 2 more tablespoons of olive oil, knead until ready.
Cover the dough with cling film and leave it in a warm place to rise for 60 minutes.
Sprinkle a little flour on the work surface and transfer the dough.
Form a ball and divide it into two parts, shape it again.
Leave the shaped dough for 10-15 minutes.
Preheat the oven to 220 degrees Celsius.
Brush the bread with water and sprinkle with cornmeal or polenta.
Make a cut across the bread.
Bake in the preheated oven at 220 degrees for 30 minutes.
