The dish celebrates the natural flavors of cauliflower, enhanced by simple seasonings, making it a staple for health-conscious eaters.

Canola oil is often less expensive and works well for roasting.
Cut up a head of cauliflower and wash it.
Chop an entire bulb of garlic.
Roughly chop 1 cup of red onion.
Slice sweet peppers for color.
Heat 3 tablespoons of olive oil in a skillet over medium-high heat.
Add the cauliflower to the hot pan and sear it until it starts sizzling and gets burnt edges, about 3-4 minutes.
Add a splash of water as needed to prevent it from becoming soupy.
Reduce heat to medium and add the chopped onions, cooking for about 1 minute.
Add garlic and peppers, sautéing for another 1-2 minutes.
Season with salt to taste and mix.
Add 1/4 cup of water and cover with a lid, letting it sit for 2 minutes.
Add lemon zest and black pepper to taste, then squeeze fresh lemon juice over the dish.
Remove from heat and serve.
