Using homemade broth can be healthier and cheaper.
Wash the oxtails and prepare the other ingredients.
In a large pot, add oxtails and diced tomatoes.
Add beef bouillon cubes, onion soup mix, and minced garlic to the pot.
Add diced onions and rutabaga to the pot.
Cook on medium-high heat for about 1.5 hours until the oxtails are tender.
After 1.5 hours, add tomato paste and okra to the pot.
Cook for an additional 15-20 minutes.
Add potatoes and noodles to the pot and cook for another 10 minutes.
Add leftover carrots and any other mixed vegetables to the pot.
Add sugar to cut the acidity of the tomatoes if desired.
Cook for another 15-20 minutes until everything is cooked through and flavors meld.
Season with salt to taste before serving.
