1 kg oxtail bones
1 onion, halved
4 celery stalks, chopped
2 carrots, peeled and chopped
5 cloves garlic, roughly chopped
2.5 cm ginger, peeled and chopped
2 lemongrass stalks, chopped
4 star anise
2 tbsp coriander seeds
1 tbsp black peppercorns
1 tbsp brown sugar
4 tbsp peanut oil
3.5 L water or beef broth
3 tbsp fish sauce
salt
pepper
50 g bean sprouts
50 g shredded carrots
2 tbsp basil, chopped
a few coriander leaves
a few mint leaves

Season the oxtails with salt and pepper.

Heat a saucepan on medium to high heat and add peanut oil.

Brown the oxtails on all sides, then remove them from the pan.

Char the cut sides of the halved onion in the same pan until nicely charred, then remove them.

Add celery, carrots, garlic, and ginger to the pan and sweat for a few minutes.

Return the oxtails and charred onions to the pan and fill with water or beef broth.

Cover and let simmer for about 3 hours or until the meat is tender.
