Warm milk to between 100 and 110 F.

Mix milk with yeast and about ¾ C of the flour in the bowl of a mixer.

Cover and allow to rest in a warm place about 30 min.

Meanwhile, mix the rest of the 320 g of flour and the sugar in a medium mixing bowl.

After the allotted 30 minutes have passed, add the butter, egg, and salt to the milk mixture in a stand mixer using the paddle attachment. Mix well.

Switch to the dough hook.

Add the rest of the 320 g flour. Turn your mixer to medium speed and walk away; be away for five minutes, no cheating.

Return to your mixer.

Check your dough. Is it coming away from the sides? If yes, move on to step 10. If no, knead in a bit more flour, and repeat step 9.

Turn off the mixer, and poke the dough. Is it sticky? If yes, move onto step 11. If no, move on to step 12.

Is it very sticky or just a little sticky? If it’s just a little sticky move on to step 12. If it’s very sticky knead in a bit more flour and repeat step 10.

Cover the dough with plastic wrap and put it in the fridge for 60 minutes to firm up a bit and make it easier to roll.

Roll out dough on a lightly floured surface to approximately ½ in or 1 cm thick.

Cut 3 in, 7 cm circles with 1 in, 2 cm holes in the dough.

Place donuts on floured tea towels to keep them from sticking and deflating after step 16.

Allow donuts to rise in a warm place until they double in size, 10-30 minutes, depending on the temperature of your chosen spot.

Fry in 350 F 180 C oil for about 1 minute on each side. Keep an eye on that fry thermometer! Fry oil can be rascally.

Place and leave them on a cooling rack until they cool completely.
