Irish Guinness Brown Bread

300 g whole wheat flour
100 g white bread flour
100 g porridge oats
1.5 teaspoons bicarbonate of soda
0.5 teaspoons baking powder
pinch of salt
250 ml buttermilk
2 tablespoons melted butter
200 ml Guinness
1 tablespoon malt extract

Preheat the oven to 180°C.

In a bowl, combine 300 g whole wheat flour, 100 g white bread flour, 100 g porridge oats, 1.5 teaspoons bicarbonate of soda, 0.5 teaspoons baking powder, and a pinch of salt. Whisk together.

In another bowl, mix 250 ml buttermilk with 2 tablespoons melted butter and 200 ml Guinness.

Add 1 tablespoon malt extract to the wet mixture.

Pour the wet ingredients into the dry ingredients and mix with a wooden spoon until combined.

Let the mixture sit for a few minutes to hydrate the flour.

Grease a 2 lb bread tin.

Transfer the dough into the bread tin and smooth the top.

Make a line in the center of the dough with a knife to help with rising.

Bake in the preheated oven for 50 to 60 minutes.

Check the bread's internal temperature; it should be between 94°C and 100°C when done.

Remove from the oven and let it cool.
