2

Introduce the ingredients: 3 ears of corn, large sabanera potatoes, habas, peas, tomato, red bell pepper, green onion, garlic, bay leaf, thyme, cumin, color, oil, pork ribs, beef ribs, and chorizos.

3

Start by cutting the green onion into small pieces.

4

In a pot, heat a splash of oil and sauté the chopped green onion for about 7 minutes over medium-low heat.

5

Chop the tomato into small cubes and add it to the pot with the sautéed onion.

6

Add the pork ribs and beef ribs to the pot, cooking them together.

7

After about 20 minutes, check the meat to see if it's cooking well.

8

Prepare the rice while the meat is cooking.

9

Add the corn, habas, potatoes, and peas to the pot with the meat.

10

In a separate pot, boil water and cook the habas for about 2 minutes with a pinch of salt.

11

Remove the habas from the boiling water and set them aside.

12

Add the chorizos to the pot with a splash of oil and sauté them.

13

After sautéing, incorporate the chorizos into the main pot with the guiso.

14

Add the final ingredients: the cooked habas and peas to the pot.

15

Let everything cook together for about 5 minutes to absorb the flavors.

16

Serve the cocido boyacense with rice, avocado, and top it with queso de boyacá.
