1 pound ground turkey
1 can pinto beans
1 can black beans
1 cup salsa
1 can enchilada sauce
1 onion, chopped
1 green pepper, chopped
1 yellow squash, halved
1 packet taco seasoning
1/2 cup Colby Jack cheese
corn tortillas
1 can cream of chicken soup
1/2 cup milk
1 cup sour cream
1 teaspoon garlic powder
salt and pepper to taste
20 oz Tater Tots
1/2 cup sharp cheddar cheese

Cut the green pepper into tiny pieces to make it easier for kids to eat.

Cook 1 pound of ground turkey in a skillet until browned.

Add the chopped green pepper, half of a yellow squash, and chopped onion to the skillet and cook until vegetables are tender.

Add 1 can of black beans, 1 can of pinto beans, 1 cup of salsa, half of the can of enchilada sauce, and 1 packet of taco seasoning to the skillet. Mix well and let simmer for a few minutes.

Spray the bottom of the slow cooker with cooking spray.

Layer a third of the meat mixture in the slow cooker, followed by 1/2 cup of cheese and corn tortillas, repeating the layers two more times.

Pour the remaining enchilada sauce over the top and cover with the lid.

Cook on low for 3 to 4 hours, checking at 3 hours.

For the cowboy casserole, cook the remaining ground turkey and diced onions in a skillet.

Add corn (or mixed vegetables if available), 1 can of cream of chicken soup, 1/2 cup of milk, 1/4 cup of sour cream, garlic powder, salt, and pepper to the skillet. Mix well.

Spray the bottom of the slow cooker with cooking spray and pour the mixture into it.

Top with Tater Tots to cover the mixture and sprinkle with 1/2 cup of sharp cheddar cheese.

Cover and cook on low for about 6 hours, checking for doneness.
