Edamame Guacamole

1 cup / 165g Cooked edamame
1 Large well ripe avocado
1 Juicy lime
1/2 tsp. / 2g Salt
A pinch black pepper
2 to 3 Thai chili
1 Clove garlic
1 Green onion
Cilantro for taste

In a pot, bring water to a boil and add the shelled edamame. Cook for 3-5 minutes until tender, then drain and cool.

In a mixing bowl, mash the ripe avocado until smooth.

Add the cooked edamame to the bowl with the mashed avocado.

Pour in the lime juice and add the chopped cilantro, garlic powder, salt, black pepper, and cayenne pepper if using.

Mix all the ingredients together until well combined, but leave some texture from the edamame.

Taste and adjust seasoning if necessary, adding more salt or lime juice as desired.

Transfer the guacamole to a serving bowl and garnish with additional cilantro if desired.

Serve with tortilla chips, pita chips, or fresh vegetables for dipping.
