Scoop the avocado flesh into a mortar and pestle.

Add the bright green shucked edamame to the mortar.

Mash the avocado and edamame together until combined but still chunky.

Add chopped cilantro and minced garlic to the mixture.

In place of regular onion, add chopped green onions.

Drizzle in some canola oil and season with salt and pepper.

Mix everything together until finely mushed but not too smooth, leaving some texture.

Optionally, add hot peppers for extra spice if desired.

Serve the guacamole with tortilla chips or fresh vegetables like asparagus, peppers, and green beans.
