2 garlic cloves, crushed
225g orzo
700ml chicken stock
50ml light cream
75g baby spinach
1 lemon, zested and juiced
25g feta
Fresh parsley

Preheat oven to 180c.

Heat a medium skillet with low calorie oil spray.

Season chicken thigh with salt and pepper and brown all over for 8-10 minutes, remove and set aside.

Add a few more sprays of calorie oil spray to the pan then sauté shallots and garlic for 2-3 minutes until fragrant.

Add orzo, stirring regularly, until toasted.

Add stock and bring to the boil, reduce to a simmer for 5 minutes until stock reduces.

Take off the heat and stir through cream, spinach, lemon juice and zest.

Nestle chicken thighs back into the pan and season with salt and pepper.

Oven bake, uncovered, for 15-20 minutes until the chicken is cooked through and the orzo has absorbed the stock.

Top with crumbled feta and fresh parsley.
