In a bowl, mix 420 g of warm water with 180 g of warm milk.
Stir in 60 g of sugar and sprinkle in 14 g of active dry yeast.
Let it sit for 5 to 10 minutes until foamy.
In a bowl, add 1000 g of all-purpose flour and 20 g of salt, and mix.
Make a well in the middle of the flour.
Pour in the yeast mixture and 60 g of melted butter.
Stir until it looks like a shaggy mess, then switch to using your hands.
Knead the dough on a floured surface for about 8 to 10 minutes until smooth and elastic.
Place the dough in a lightly oiled bowl, cover, and let it rise until doubled in size (about 1 hour).
If using a proof setting, it may take 30 to 40 minutes.
Punch down the dough gently and fold it back in on itself.
Let the dough rest for 20 to 25 minutes.
Divide the dough into two equal pieces.
For the classic look, divide each piece into three equal pieces (about 300 g each) and roll into balls.
Place the balls into a greased loaf pan side by side and cover with a towel.
Proof until puffy and sitting about 1 to 2 cm above the rim of the pan (about 45 minutes to 1 hour).
Preheat the oven to 350°F (175°C).
Bake in the preheated oven for 35 to 40 minutes until golden brown and sounding hollow when tapped.
If using a thermometer, pull the bread when it hits 109°F.
Let cool in the pan for 5 to 10 minutes, then turn out onto a wire rack.
Brush the tops with butter for a soft crust.
Let cool for 1 to 2 hours before slicing.
