1

Take a plastic gallon bag and fill it with about a half a gallon of cold water.

2

Add about half a cup of lemon pepper seasoning to the water to create the brine.

3

Mix the water and lemon pepper seasoning together until well combined.

4

Put the entire washed and rinsed chicken into the bag and seal it up.

5

Place the bag in a tray in the refrigerator to prevent leaks and brine the chicken for 2 to 8 hours.

6

After brining, remove the chicken from the bag and rinse off all the lemon pepper.

7

Season the inside and outside of the chicken with an additional couple of tablespoons of lemon pepper seasoning.

8

Preheat the smoker to 225°F.

9

Smoke the chicken for 45 minutes to 1 hour per pound until the internal temperature reaches 165°F.

10

Insert a meat probe into the chicken to monitor the internal temperature.

11

Place the chicken in the smoker below any vegetables or side dishes being cooked at the same time.

12

Add wood chips to the smoker every 45 minutes to 1 hour for flavor.

13

Use a disposable tray in the bottom of the smoker for easier cleanup and line the drip tray with aluminum foil.
