Combine paprika, onion salt, sage, garlic powder, oregano, chilli powder, black pepper, basil, marjoram, and coriander in a bowl and mix together, then divide in half.

Pour 2.5 liters of filtered water into a pot and add half of the spice mix along with whole allspice and whole black peppercorns.

Add salt, saltpeter, and sugar to the pot, then bring to a boil, stirring frequently.

Reduce heat and allow the pot to simmer for 5 minutes, then remove from heat and let cool completely.

Poke holes through the skin of the chicken pieces using a carving fork.

Place chicken in a large sterilized container and pour the cooled brine over the chicken pieces, then cover and refrigerate for 24 hours.

After 24 hours, remove chicken from the brine.

Combine 2 cups of all purpose flour with the other half of the spices.

Lightly beat 4 eggs.

Dredge the chicken in the flour mixture, then dip it in the egg, ensuring to wet all of the flour.

Sprinkle a layer of the flour mixture onto a platter and transfer the coated chicken pieces to the platter, allowing the coating to set for 20 minutes.

Half fill a wok or pot with oil and heat to 160°C (325°F).

Fry the chicken pieces for 20 minutes, turning over halfway.
