2 pounds smoked herring
1 small red onion (sliced)
2 bell peppers (cut into strips)
4 plum tomatoes (cut into eights)
2 tablespoons vegetable oil
1 cup tomato sauce
1 teaspoon salt (or more, to taste)
minced cilantro (or parsley, optional)

Soak herring in a gallon of water for half an hour. Remove from the water and discard the water.

Place herring in a pot with half a gallon of clean water and boil over medium-low heat until it starts flaking (15-20 mins). Remove from the water and cool to room temperature. Discard water.

Flake the herrings, cleaning from bones and skin. Set aside.

Heat the oil over medium heat. Cook and stir onion, peppers, and tomatoes until cooked-through (about 5 mins). Stir in herrings, 1/2 cup of water, and tomato sauce. Season with salt to taste. Simmer until everything is heated through.

Serve hot and garnish with cilantro.
