Ground almonds are gluten-free and lower in carbs.
Season 380g cod fillet with salt and black pepper to taste, rub in the seasonings, and set aside for 15 minutes.
Dice 1 potato and add it to a baking pan lined with aluminum foil.
Dice ½ carrot and add it to the baking pan.
Dice ½ purple onion and add it to the baking pan.
Cut 1 broccoli into pieces, wash thoroughly, and add to the baking pan.
Pour some olive oil over the vegetables, season with salt and black pepper to taste, and mix well.
Bake the vegetable mixture in the oven at 400°F (205°C) for 25-30 minutes.
Prepare ½ cup all purpose flour in a bowl and add olive oil and 1 tbsp unsalted butter.
Coat the seasoned fish with the flour mixture.
Place the coated fish in a skillet and cook for 5 minutes on medium heat.
Flip the fish over and cook for another 5 minutes.
Squeeze the juice of ½ lemon on the fish and test the temperature with a thermometer.
After 25-30 minutes, remove the vegetables from the oven and serve with the fish, garnished with parsley.
