Dried figs are more nutrient-dense, and canned figs can be more affordable.
Pick and prepare the figs, trimming off the stems.
Measure out 1 pound of fresh figs, around 30 to 40 figs.
Puree the figs in a food processor with 1/4 cup of water for 10 to 15 seconds until mostly smooth with some chunks remaining.
Add the pureed figs to a medium-sized skillet over medium high heat.
Stir in 1/4 cup of honey, 1/4 cup of coconut sugar, a pinch of salt, and 1 tablespoon of lemon juice.
Bring the mixture to a boil and cook for 1 to 2 minutes, stirring constantly.
Reduce heat to medium low and let simmer uncovered for 10 to 15 minutes until reduced by half.
Add 1 teaspoon of vanilla extract during the last 1 to 2 minutes of cooking.
Let the fig jam cool to room temperature before serving or storing.
