Preheat the oven to 350°F (175°C).
Grease three 9-inch round cake pans with butter and flour them by patting flour around the inside of the pans.
In a large bowl, combine 3 cups of all-purpose flour, 1 teaspoon of salt, 1 teaspoon of baking soda, and 1 teaspoon of ground cinnamon.
In another bowl, beat 3 eggs and add them to the dry ingredients.
Add 1 and 1/2 cups of vegetable oil to the mixture and stir until the dry ingredients are moistened.
Add 2 cups of granulated sugar and stir until combined.
Mix in 1 cup of crushed pineapple and 2 cups of chopped bananas, stirring until well combined.
Spoon the batter into the prepared cake pans, one spoonful at a time, spreading it out evenly.
Bake in the preheated oven for 25 to 30 minutes, checking with a toothpick for doneness.
Let the cakes cool in the pans for 10 minutes before flipping them onto a cooling rack to cool completely.
For the frosting, combine 2 blocks of softened cream cheese and 2 sticks of softened butter in a bowl.
Add 2 teaspoons of vanilla extract and mix on low speed until combined.
Gradually add the entire 32 oz bag of powdered sugar, mixing until the frosting is thick and creamy.
Frost the first layer of the cooled cake with a dab of frosting to hold it in place, then add more frosting on top.
Place the second layer on top, frost it, and then add the final layer, ensuring it is even.
Frost the top of the cake and sprinkle 1 cup of chopped pecans on top.
