Cut the skinless boneless chicken breast into two thin cutlets.
In a bowl, combine 1 cup of buttermilk, 1/2 cup of pickle juice, 3 tablespoons of hot sauce, 1 teaspoon of cayenne pepper, 1 teaspoon of smoked paprika, 2 teaspoons of onion powder, 2 teaspoons of garlic powder, and 1 teaspoon of complete seasoning. Stir until well combined to make the brine.
Add the chicken cutlets to the brine, ensuring they are fully submerged. Let them marinate for at least 3 hours.
In another bowl, add 2 cups of flour, 1 star stone packet, 2 teaspoons of complete seasoning, 1/2 teaspoon of cayenne pepper, 1 teaspoon of chili powder, 1 teaspoon of onion powder, and 1 teaspoon of black pepper. Stir to combine the flour mixture.
Remove the chicken from the brine and coat it in the seasoned flour, shaking off the excess flour. Set aside on a plate and let it sit for at least 15 minutes.
Heat vegetable oil in a deep pan to 350 degrees Fahrenheit. To check if the oil is ready, dip the back of a wooden stick into the oil; if it bubbles, it's ready.
Fry the chicken cutlets for 3 to 5 minutes per side, or until golden brown and cooked through. Remove from the oil and place on a cooling rack to drain excess oil.
To make the chick-fil-a sauce, combine 1/2 cup mayo, 2 tablespoons yellow mustard, 1/4 cup honey, 1/4 cup barbecue sauce, and 1 tablespoon lemon juice in a bowl. Stir until smooth and thick.
In a large saucepan, melt 1 tablespoon of butter over medium heat and toast the brioche buns for about 5 minutes until golden brown, flipping them halfway through.
Assemble the sandwich: spread a thin layer of chick-fil-a sauce on the bottom bun, add lettuce, thinly sliced tomatoes, the fried chicken, a slice of cheese, and top with the top bun. Add more chick-fil-a sauce if desired.
