100g (½ cup) glazed cherries
25g (¼ cup) crystallised ginger
75g (about ¾ cup) nuts (pistachios and cashews)
2-3 tablespoons cranberry jam
120g (1 cup) plain flour
1 teaspoon baking powder
100g (½ cup) brown sugar
3 medium eggs
110g (½ cup) salted butter

Add 3 medium eggs and 110g salted butter; whisk for 20-30 seconds, mixing in between.

Prepare a baking pan (25x11x6 cm) lined with several layers of parchment paper.

Bake in a preheated oven at 160°C (320°F) for 30 minutes, then reduce to 150°C (300°F) and bake for another 30-40 minutes.
