Carson Rodizio Hot Wings

Originating from the American bar scene, hot wings have become a staple for game days and gatherings. These spicy, crispy treats are often served with cooling dips and crunchy veggies, making them a favorite for sharing. Today, variations abound, with different sauces and cooking methods, but the classic buffalo style remains beloved across the globe.

Start with chicken wings in a bowl.
Prepare the sauce with chipotle, ancho, rehydrated and ground Priscilla peppers, garlic, onion, and Desperately Seeking hot sauce.
Mix the sauce with the chicken wings until they are fully coated.
Marinate the wings in the fridge overnight.
Add your favorite barbecue rub and Cajun seasoning to the wings.
Skewer the marinated wings onto skewers for the Carson Rodizio.
Place the skewers into the Carson Rodizio machine.
Cook the wings over live fire on the Big Green Egg for about 20-25 minutes, ensuring even heat and caramelization.
Remove the wings from the skewers after cooking.
