Begin by adding 1 and 1/4 cups of warm water to a bowl.

Add 3/4 cups of sourdough starter to the water.

Mix in 1 tablespoon of honey and 1 tablespoon of brown or white sugar.

Add 3 and 1/2 cups of all-purpose flour to the mixture and give it a rough mix.

Let the mixture sit for about 10 minutes, covered to prevent drying out.

After 10 minutes, add 1 and 1/2 teaspoons of salt around the edges and mix it in slowly with a wooden spoon.

Once most of the flour is combined, knead the dough by hand for about 2 minutes until it forms a ball.

Add oil around the perimeter of the bowl and turn the dough ball over to coat it in oil.

Cover the bowl with Saran Wrap or a lid and let it rise for about 5 hours.

After rising, remove the dough from the bowl and stretch it out to about half an inch thick.

Add finely chopped jalapeños and shredded extra sharp cheddar cheese to the center of the stretched dough.

Fold the dough over the jalapeños and cheese, then add more jalapeños and cheese on top.

Fold the dough over again and tuck it in to form a round loaf.

Place the loaf on parchment paper in two small pots (calderos) that are about 8 or 9 inches in diameter, one pot will cover the loaf.

Let the loaf rise for another 30 minutes while preheating the oven to 425°F.

Score the top of the dough with a knife or razor to release gases before baking.

Bake the covered loaf in the oven for 35 to 40 minutes.

After 35 to 40 minutes, remove the cover and place a pan with 3 inches of cold water in the oven to create steam.

Bake uncovered for an additional 5 to 10 minutes until the internal temperature reaches above 200°F.

If the internal temperature is not above 200°F, cover and bake for another 5 to 10 minutes until it reaches the desired temperature.
