Today, it has gained popularity in artisan bakeries and home kitchens alike, celebrated for its unique taste and texture.

Canned jalapeños are usually more affordable and still provide heat.
Add 7 g salt to a bowl.
Add 250 g water to the bowl.
Add 70 g active starter to the bowl.
Add 350 g bread flour to the bowl.
Mix everything together until a shaggy dough forms.
Clean your hands, cover the bowl, and let it rest for 30 minutes.
Prepare a bowl of water for the stretch and fold technique.
Perform a stretch and fold by pulling up and stretching all sides of the dough to the center.
Clean the bowl with a scraper and round the dough inside the bowl to create tension.
Let the dough rest for 1 hour.
Cut sharp and mild cheddar cheeses into cubes, not too big or small.
Prepare peeled jalapenos, removing as much extra juice as possible.
Bring the dough onto a slightly wet surface after 1 hour of resting.
Spread the dough without tearing it, adding the cheese and jalapeno inclusion.
Fold the sides of the dough like a book to the center after adding the inclusion.
Round the dough up slightly and place it back in the bowl.
Let the dough rest for another hour.
After 1 hour, perform a gentle coil fold without pushing too hard.
Let the dough ferment at 27° C for up to 2 hours until puffy and airy.
Gently flip the dough and round it up using the surface.
Let the dough sit uncovered on the counter for 20 minutes.
After 20 minutes, shape the dough into a banneton without using flour.
Cover the dough and place it in the fridge for an overnight cold proof.
Preheat the oven to the highest temperature for 30 minutes to 1 hour.
Take the dough out of the fridge and score it before baking.
Bake the bread at 230° C for 20 minutes with steam.
After 20 minutes, switch the position of the bread and reduce the heat to 215° C.
Bake for another 20 to 25 minutes until done.
Let the bread cool down completely before slicing.
