Soak 2 cups of red kidney beans in 6 cups of water for 2.5 hours in the same water.
Bring the beans to a boil over medium-high heat.
Add diced medium onion, garlic, and bell pepper to the pot.
Season with salt and fresh ground black pepper; stir to combine.
Reduce heat to low and simmer for about 1 hour until beans are tender.
Remove thyme sprigs after about 1 hour of cooking.
Switch to a heavy pot and add 1.5 tablespoons of olive oil and 1.5 tablespoons of golden brown sugar over high heat.
Stir until the sugar melts and turns a deep amber color.
Add the cooked beans and their liquid to the pot; stir to combine.
Add more fresh ground black pepper, 1 tablespoon of Worcestershire sauce, 1/4 cup Caribbean green seasoning, 1/4 cup diced celery, 1/4 cup diced carrots, and 1/4 cup diced tomato; stir well.
Pour in 8 cups of vegetable stock and 2 tablespoons of tomato paste; stir to combine.
Add 2 tablespoons of maple syrup and 2 tablespoons of coconut cream; stir well.
Bring the mixture to a boil and then let it simmer for about 30 minutes until everything is tender.
Taste and adjust seasoning as needed; add dehydrated pimento peppers if available.
Finally, add finely chopped shadow benny (culantro) and stir it in.
