4 boneless, skinless chicken breasts, about 4 ounces each
2 Tbl oil
½ cup flour
2 eggs, beaten and mixed with ¼ cup water
1 cup pecans – chopped into small pieces; reserve ½ cup for garnish
½ cup plain panko crumbs
½ tsp salt
½ cup water
2 Tbl corn starch
2 Tbl fresh lime juice
2 Tbl brown sugar
1 Tbl reduced sodium soy sauce
½ cup pure maple syrup

Pat the chicken dry and set aside.

Set out 3 shallow bowls or pie tins. Put the flour in one, the egg/water mixture in another and stir together ½ cup of the pecans, the panko and salt in the third.

Using tongs or a fork, dip the chicken in the flour and gently shake it off.

Dip it quickly in the egg and then into the panko/pecan crumbs.

Use one hand to pat the crumb mixture onto the chicken and place it on a clean plate. Repeat with remaining chicken.

Heat a saute pan over medium heat and add the oil.

Sear the chicken on each side just until golden brown.

Transfer to a baking sheet lined with parchment paper and bake at 350-degrees until chicken reaches 165-degrees internal temperature, about 15 minutes depending on the thickness of the chicken.

While the chicken is baking, put the lime juice, brown sugar, soy sauce and maple syrup in a small sauce pan.

Mix the cornstarch and water together and add to the sauce pan.

Heat over medium-medium high heat and bring mixture to a gentle boil to thicken.

Turn off heat, drizzle the mixture evenly over the 4 pieces of chicken and sprinkle with the remaining pecans.
