Put on gloves to avoid staining hands from beets.
Peel the beets and chop off the green parts.
Dice the beets into small cubes.
Peel and dice 2 potatoes and 1 carrot.
Finely chop garlic and 1 quarter of a large Spanish onion.
Heat olive oil in a pot over low heat.
Add garlic and onion to the pot and sauté until fragrant.
Add the diced beets to the pot and stir.
Continue cooking on low heat while preparing the other vegetables.
Add the diced potatoes and carrots to the pot.
Fill the pot with water, enough to cover the vegetables.
Add 1 or 2 bouillon cubes depending on the amount of water.
Add 2 tablespoons of lemon juice and 2 tablespoons of wine vinegar to the pot.
Season with salt and pepper to taste.
In a separate bowl, mix 2 tablespoons of sour cream with 1 tablespoon of flour until smooth, adding water if necessary to avoid lumps.
Stir the sour cream mixture into the boiling soup.
Add dill to the soup and let it boil for another minute before serving.
