½ medium onion, diced
2 tsp. minced garlic
1 TBSP stone ground mustard
12oz. easy-drinking beer
2 cups chicken stock
1 – 2 cups heavy cream
24oz. sharp cheddar cheese, shredded

In a heavy-bottomed sauce pot or large Dutch oven, sear the brats on all sides over medium-high heat.

Remove brats from pot and reduce heat to medium.
