Grab your flatbread. You can use homemade flatbread or storebought naan.
Place the flatbread on a baking sheet.
Drizzle olive oil over the flatbread, or brush it on if preferred.
Press garlic using a garlic press and spread it over the flatbread. Alternatively, you can chop the garlic or thinly slice it.
Spread the garlic and olive oil evenly with a pastry brush.
Use air-fried artichokes or canned artichokes (drained and chopped) and spread them across the flatbread.
Sprinkle a couple tablespoons of feta cheese over the artichokes, adjusting the amount to your liking.
Bake in the oven for about 10 minutes until the edges are golden brown and the feta is slightly melty.
While the flatbreads bake, zest half a lemon using a microplane.
Juice the same lemon to get about a tablespoon of juice.
Add white balsamic vinegar and a little olive oil to the lemon juice.
Sprinkle in red pepper flakes and freshly ground black pepper, then whisk the dressing together.
Toss the arugula in the dressing until coated.
Once the flatbreads are done, top them with the dressed arugula.
Optionally, add more feta crumbles and flaky sea salt on top before slicing.
