Peanut Butter Cheesecake

266g Oreo Cookies, Cream Included
75g Unsalted Butter, Melted
1/2 tsp Sea Salt Flakes
550g Cream Cheese
190g Icing Sugar, Sifted
250g Smooth Peanut Butter
1/2 tsp Vanilla Bean Paste
125ml Thickened Cream
150g Dark Chocolate Chips or Chunks
160ml Thickened Cream

For the base, crush the Oreo cookies in a large mixing bowl until they resemble wet sand.

Mix in the melted butter and sea salt flakes until well combined.

Press the mixture into the bottom of a cheesecake pan to form the base.

In another mixing bowl, combine the cream cheese and icing sugar, mixing until extremely smooth.

Add the peanut butter, vanilla bean paste, and thickened cream to the cream cheese mixture, and mix until well combined.

Pour the cheesecake mixture over the prepared base and smooth the top.

For the chocolate ganache, heat the thickened cream and pour it over the dark chocolate chips, stirring until smooth.

Drizzle the ganache over the cheesecake and refrigerate until set.
