Drain the liquid from the can of young jackfruit and rinse it off.
Add the jackfruit to a pot with fresh water and boil for 10 minutes.
After boiling, remove the jackfruit from the pot, drain the remaining liquid, and rinse it again.
Use a fork to shred the jackfruit until it resembles pulled meat.
Chop onion, bell peppers, and scallion while the jackfruit is boiling.
In a bowl, combine the shredded jackfruit, chopped onion, bell peppers, scallion, cajun seasoning, onion powder, garlic powder, cumin seed, dijon mustard, salt, and black pepper.
Mix all ingredients together until well combined and adjust seasoning to taste.
Cover the mixture and let it sit for a while to allow the flavors to meld.
Heat oil in a pot and fry ripe plantains over medium heat until golden brown, turning them as needed.
Once the plantains are done, remove them from the oil and place them on a paper towel to drain excess oil.
Toast slices of protein grain bread lightly.
Assemble the sandwich by layering lettuce, tomato, the jackfruit salad mixture, and fried plantains on the toasted bread.
Top with another slice of bread to complete the sandwich.
