In a saucepan, whisk together milk, cream, sugar, and cornstarch over medium heat.
Cook until thickened, stirring constantly, about 5-7 minutes.
Remove from heat and stir in vanilla extract and lemon zest.
Pour the filling into the cooled crust and smooth the top.
Chill in the refrigerator for at least 2 hours until set.
Top with fresh fruit and glaze with gelatin before serving.
