Preheat the oven to 400°F (200°C).

Grease a deep glass pie dish or cast iron skillet with 1 tablespoon of butter.

In a bowl, combine 2 boxes of Jiffy cornbread muffin mix with 2 eggs and 2/3 cup of milk, following the box directions.

Add 1/3 cup of full fat sour cream and 1/2 cup of packed light brown sugar to the mixture.

Take the hot pie dish out of the oven and pour the cornbread mixture into it.
