Preheat the oven to 400°F (200°C).
Grease a deep glass pie dish or cast iron skillet with 1 tablespoon of butter.
In a bowl, combine 2 boxes of Jiffy cornbread muffin mix with 2 eggs and 2/3 cup of milk, following the box directions.
Add 1/3 cup of full fat sour cream and 1/2 cup of packed light brown sugar to the mixture.
Mix everything together for about one minute.
Take the hot pie dish out of the oven and pour the cornbread mixture into it.
Return the dish to the oven and bake for 20 to 22 minutes.
While the cornbread is baking, prepare the topping by combining 4 tablespoons of European butter, 2 tablespoons of raw honey, and 1/4 teaspoon of salt in a bowl.
Whisk the topping ingredients together until well mixed.
After about 21 minutes, check the cornbread for doneness by inserting a fork.
Once done, immediately pour the honey butter topping over the cornbread and let it infuse for a minute or two before serving.
