2 tbsp cold water
¾ cup all-purpose flour
¼ cup cornstarch
1 tsp baking powder
½ tsp salt
½ tsp MSG
¾ cup ice-cold water
Neutral oil (canola or vegetable) for deep frying

Add chicken, salt, MSG, garlic powder, onion powder, white pepper, egg, cornstarch, and water to a food processor. Pulse until smooth and sticky.

In a bowl, whisk flour, cornstarch, baking powder, salt, and MSG. Add ice-cold water just before frying — don’t overmix (a few lumps are fine).

Heat oil to 350°F (175°C). Dip each nugget in the batter, let excess drip off, then carefully place it in the oil.
