The fruit tart, or 'tarta de frutas', has its roots in European pastry traditions but has been embraced in Mexico as a delightful dessert for celebrations. Often adorned with vibrant seasonal fruits, it symbolizes the abundance of fresh produce available in the country. This dessert is popular at birthdays and family gatherings, showcasing the beauty of nature's bounty. Today, variations abound, with many opting for different crusts and fillings, reflecting local tastes and preferences.

Put the flour in a bowl forming a volcano shape.
Add butter cut into squares, egg, water, and a dash of salt into the center.
Incorporate the ingredients with fingers starting from the center to form a ball.
Wrap the dough in plastic or a plastic bag and refrigerate for 30 minutes.
Roll out the dough and extend it over the baking pan.
Bake at 350°F (175°C) for 30 to 40 minutes until golden brown.
Soak strawberries in a pot with water and a few drops of disinfectant for 5 minutes.
Cut the leaves off the strawberries and slice them.
Peel and slice the kiwis.
Dissolve corn starch in orange juice and put it in a pot with sugar; heat at medium.
Blend the pineapple slices and add to the corn starch mixture; continue cooking until it thickens and let cool.
Pour half of the mixture over the pie crust and add slices of strawberry and kiwi on top.
Add the rest of the mixture and decorate with more fruit on top.
Refrigerate for at least 2 hours.
