Start with 2 pounds of ground beef.
Crack in 2 eggs and add 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of paprika.
Grate 1 onion and add it to the bowl.
Finely chop a bunch of fresh parsley and add it in too.
Mix everything well by hand.
Cut 5 medium potatoes into large pieces and place them into a pot.
Fill the pot with water and add 1 teaspoon of salt. Cover and cook over medium heat for about 30 to 40 minutes until soft.
Spread the seasoned ground beef on a large sheet of parchment paper, shaping it into a large, even square.
In a frying pan, melt half a stick of butter over medium heat and add a drizzle of olive oil.
Grate 2 cloves of garlic and add it to the melted butter, sautéing until fragrant.
Dice 2 carrots into small cubes and add them to the pan, letting them sizzle gently.
Dice 1 red bell pepper and add it to the pan, followed by 1 yellow bell pepper, stirring everything together until tender.
Remove the pan from heat and let the vegetables cool slightly.
Spread the sautéed vegetables evenly over the ground beef square.
In a clean pan, drizzle a little olive oil and add 7 ounces of chopped mushrooms, stirring until golden and tender.
Spread the mushrooms evenly over the vegetables.
Grate 5 ounces of Emmental cheese and sprinkle it over the top.
Roll the beef into a tight, even log using the parchment paper.
In a small bowl, mix 2 tablespoons of ketchup, 4 tablespoons of soy sauce, 1 teaspoon of grain Dijon mustard, and 2 tablespoons of honey to make the marinade.
Brush the beef roll generously with the marinade and wrap it in foil.
Place it on a baking tray and bake in a preheated oven at 360°F for 1 hour.
Check if the potatoes are tender and start mashing them while warm.
Finely chop a bunch of green onions and add them to the mash, along with 1 clove of finely chopped garlic.
Grate 2 ounces of Parmesan cheese and add it to the mash, along with 2 tablespoons of Philadelphia cream cheese, seasoning with 1 teaspoon of salt and 1 teaspoon of black pepper.
Mix everything together until smooth and fluffy.
10 minutes before the roll is done, take it out of the oven, open the foil, and brush it with the remaining marinade.
Return it to the oven uncovered for another 10 minutes.
Carefully take the beef roll out of the oven, slice into thick pieces, and serve.
