4 russet potatoes

1 cup heavy cream
2 sprigs rosemary

Angus beef strip steak
1 tablespoon olive oil
1/2 teaspoon seasoned salt
1/2 teaspoon pepper
1/2 teaspoon Kinder Sweet Heat seasoning
1/4 teaspoon garlic powder
1/2 teaspoon paprika
1 tablespoon Worcestershire sauce
1 stick butter
1 tablespoon minced garlic
1 teaspoon dijon mustard
1 tablespoon lemon juice
1 tablespoon freshly chopped parsley
1 tablespoon freshly chopped chives
1/2 teaspoon red pepper flakes

Peel 4 russet potatoes and cut them into pieces.

Place the potatoes in a large pot and add water and 1 teaspoon of salt.

Bring the water to a boil.

Boil the potatoes for 10 minutes until you can pierce them with a fork.

Drain the water from the pot and mash the potatoes.

Cream the potatoes through a strainer or use a potato ricer to get rid of lumps.

Mix in 4 tablespoons of butter into the mashed potatoes.

In a saucepan, add 1 cup of heavy cream, 2 sprigs of rosemary, and 2 cloves of garlic, and let it simmer over low heat for about 5 minutes or until fragrant.

Gradually pour the cream into the mashed potatoes through a fine mesh strainer and fold it in.

Mix in 2 oz of cream cheese, 1/4 cup of sour cream, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper into the mashed potatoes and set aside.

Pat the Angus beef strip steak dry with a paper towel and cut off the fat.

Cut the steak into bite-sized pieces and place them in a bowl.

Add 1 tablespoon of olive oil, 1/2 teaspoon of seasoned salt, 1/2 teaspoon of pepper, 1/2 teaspoon of Kinder Sweet Heat seasoning, 1/4 teaspoon of garlic powder, 1/2 teaspoon of paprika, and 1 tablespoon of Worcestershire sauce to the steak and mix until coated.

In a large pan over medium-high heat, add olive oil and half the pieces of steak.

Sear the steak pieces for 1 to 2 minutes on each side, then remove them from the pan and set aside.

Repeat the cooking process with the remaining steak pieces.

Lower the heat and add 1 stick of butter to the pan, using a spatula to deglaze the pan.

Once the butter has melted, add 1 tablespoon of minced garlic, 1 teaspoon of dijon mustard, 1 tablespoon of lemon juice, 1 tablespoon of freshly chopped parsley, 1 tablespoon of freshly chopped chives, 1/2 teaspoon of red pepper flakes, and 1/4 teaspoon of pepper, mixing until well combined.

Add the cooked steak bites back into the pan and toss them in the cowboy butter for around 1 to 2 minutes.

Plate the mashed potatoes and add the steak bites on top.

Add any leftover cowboy butter on top of the steak and sprinkle with parsley.
