1 tbsp paprika powder
1/2 tbsp iodized Himalayan pink salt (or to taste)
1 tbsp cumin powder (zeera powder)
1 tsp mixed herbs
1 1/2 tbsp crushed red chili (lal mirch)
1 tsp crushed black pepper (kali mirch)
1 tsp chicken powder
1 tbsp roasted & crushed coriander seeds (sabut dhania)
1 small finely chopped onion (pyaz)
2-3 finely chopped green chilies (hari mirch)
8-10 cloves finely chopped garlic (lehsan)
1 tbsp mustard paste
handful of chopped fresh coriander (hara dhania)
2 tbsp cooking oil
approx. 1.3 kg whole chicken, washed & pat dried
4 tbsp olive oil
3 tbsp finely chopped garlic (lehsan)
1/2 tsp onion powder
1 tsp paprika powder
1/2 tsp iodized Himalayan pink salt (or to taste)
1 tsp crushed red chili (lal mirch)
1 tsp cumin powder (zeera powder)
3 1/2 cups chicken stock (1 chicken cube dissolved in 3 1/2 cups of water)
500g washed & soaked sella rice (chawal) for 2 hours
1 tbsp fried garlic (lehsan)
1 tbsp chopped fresh parsley
onion rings (pyaz)
roasted veggies (green chili, tomato, onion)

In a bowl, add cumin seeds, paprika powder, pink salt, cumin powder, mixed herbs, crushed red chili, crushed black pepper, chicken powder, roasted & crushed coriander seeds, onion, green chilies, garlic, mustard paste, fresh coriander, cooking oil & mix well.

Wash and pat dry the whole chicken.

Upside down the whole chicken and remove the backbone with scissors, then flatten it.

Apply the marinade and rub evenly on both sides, cover & marinate for 2-4 hours.

On a greased and lined baking tray, place the whole chicken with marinade.

Bake in a preheated oven at 180°C for 60 minutes (on both grills).

In a pot, add olive oil and garlic & sauté for 30 seconds.

Add onion powder, paprika powder, pink salt, crushed red chili, cumin powder & mix well.

Add chicken stock, mix well & bring it to a boil.

Add rice, mix well & cook on high flame until water is reduced, then cover & steam cook on low flame for 10-12 minutes.

Add fried garlic, fresh parsley & mix well.

On a serving platter, add garlic rice, spicy chicken roast, fried garlic, fresh parsley, onion rings, roasted veggies & serve!
