Place the slab of ribs in a bowl of cool water and add 1 tablespoon of salt.
Once thawed, rinse the ribs with the salt water solution.
Using a knife, scrape off some of the fat from the ribs, but do not remove all of it as it provides flavor.
Remove the membrane from the back of the ribs, starting from one end and pulling it off.
Cut off excess fat from the back of the ribs with a knife, removing as much as possible but not all.
Dice onions into small pieces to add to the ribs.
Prepare the seasoning mix with brown sugar, cayenne pepper, garlic powder, celery salt, and black pepper.
Cut the ribs into individual pieces before baking, finding the bones and cutting in between them.
Place the individual ribs in a mixing bowl and massage them with the diced onions, seasonings, and a few tablespoons of barbecue sauce.
Let the ribs marinate for about 4 hours.
Preheat the oven to 350°F (175°C).
Prepare a baking dish and add the marinated ribs along with a little water from the marinade bowl to the baking dish.
Cover the ribs with aluminum foil and bake until tender, but not overly tender.
Remove the aluminum foil and brush barbecue sauce over the ribs, draining excess fat if desired.
Return the ribs to the oven to bake uncovered until the sauce is caramelized, checking for doneness as per preference.
