Preheat the oven to 375°F.
Prepare a 10 by 14 inch baking pan by spraying it lightly with cooking spray or rubbing with butter or coconut oil.
Trim the edges of broccoli crowns and cut them into smaller florets, about half or quarter size.
Steam the broccoli in a pot with a few inches of water for 2 minutes until vibrant and tender but not mushy.
Season the steamed broccoli with 1 tablespoon curry powder, 1 teaspoon garlic powder, salt, and black pepper; toss gently to combine.
In a large bowl, combine 12 whole eggs and 12 egg whites (1 and 1/2 cups of egg whites).
Add 1/4 cup of 2% milk to the egg mixture and season with salt and black pepper; whisk until well combined.
Layer the seasoned broccoli in the bottom of the prepared baking dish.
Sprinkle 1 and 1/2 cups of shredded cheese (cheddar and mozzarella) over the broccoli.
Pour the egg mixture over the broccoli and cheese, ensuring everything is evenly distributed.
Bake in the preheated oven for 30 to 35 minutes until the eggs are set and lightly golden brown on top.
Let the casserole cool enough to handle before cutting into 6 to 8 pieces for serving.
