Alfajores are a beloved treat in Peru, often enjoyed during celebrations and holidays. These delightful cookies, typically filled with dulce de leche, showcase the country's rich culinary heritage influenced by Spanish and indigenous traditions. Today, they are enjoyed not only in Peru but also throughout South America, with various regional adaptations.

Coconut oil adds a unique flavor while reducing saturated fats.

Greek yogurt provides creaminess with less sugar.
Start by making dulce de leche by submerging a can of condensed milk in boiling water for three hours.
Cool the can of condensed milk completely before opening it; this will be the filling for the alfajores.
In a bowl, combine all-purpose flour, followed by cornstarch and confectioners sugar, then stir to mix everything.
Transfer the mixture to a flat surface and add butter, kneading it until it becomes a dough.
Once the dough is homogenized and not sticking to the surface, cover it with cling wrap and refrigerate until set for 10 to 15 minutes.
Remove the dough from the refrigerator and transfer it onto wax paper, using a rolling pin to flatten it to your desired thickness.
Preheat the oven to 180°C (356°F) before cutting the cookies.
Use a cookie cutter to mold the cookies and place them on a baking tray.
Bake the cookies for 15 to 20 minutes until set.
Remove the cookies from the oven and let them cool completely before adding the filling.
Using the back of a spoon, take a generous amount of dulce de leche and spread it on the bottom of one cookie, then sandwich it with another cookie.
Repeat the process until all cookies are filled.
Optionally, cover the sides of the cookies with desiccated coconut or sprinkle confectioners sugar on top.
